Recipe ingredients
- 3 Tbsp. (45 mL) vegetable oil*
- 1 cup (250 mL) minced leeks, white part only
- 1 onion, chopped
- 2 medium potatoes, peeled and diced
- 2 cups (500 mL) diced broccoli
- 2 cups (500 mL) diced cauliflower
- 8 cups (2 L)) vegetable broth *
- 1 cup (250 mL) 15% table cream
- Salt and pepper to taste
- 1/2 tsp. (2 mL) ground nutmeg
- Croutons* to taste
- Grated cheese* to taste
Preparation
In a big pot, heat oil and cook leek and onion for 3 min. Add potatoes, broccoli, cauliflower and vegetable broth. Bring to a boil. Cook uncovered over medium heat for 25 min.
Purée in a blender for smooth consistency and return to pot.
Add cream and season. Cook a little longer to heat through.
Garnish with croutons and cheese just before serving.
