Recipe ingredients

  • 3 Tbsp. (45 mL) vegetable oil*
  • 1 cup (250 mL) minced leeks, white part only
  • 1 onion, chopped
  • 2 medium potatoes, peeled and diced
  • 2 cups (500 mL) diced broccoli
  • 2 cups (500 mL) diced cauliflower
  • 8 cups (2 L)) vegetable broth *
  • 1 cup (250 mL) 15% table cream
  • Salt and pepper to taste
  • 1/2 tsp. (2 mL) ground nutmeg
  • Croutons* to taste
  • Grated cheese* to taste

Preparation

In a big pot, heat oil and cook leek and onion for 3 min. Add potatoes, broccoli, cauliflower and vegetable broth. Bring to a boil. Cook uncovered over medium heat for 25 min.
Purée in a blender for smooth consistency and return to pot.
Add cream and season. Cook a little longer to heat through.
Garnish with croutons and cheese just before serving.
