Recipe ingredients
- 1 340-g package of No Yolks pasta
- 1/3 cup (80 mL) olive oil*
- 4 tsp. (20 mL) balsamic vinegar*
- 2 tsp. (10 mL) fresh-squeezed lemon juice
- 1 green onion, minced
- 1 garlic clove, chopped
- Salt and pepper to taste
- 1 1/2 cups (375 mL) cherry tomatoes, halved
- 1/2 cup (125 mL) tinned or fresh asparagus tips
- 1 1/2 cups (375 mL) diced cooked ham
- 1/4 cup (60 mL) minced fresh basil
Preparation
Cook pasta according to package instructions. Drain and rinse under cold water. Drizzle with olive oil and toss. Set aside.
In a bowl, mix oil, vinegar, lemon juice, green onion, garlic, salt and pepper together. Add remaining ingredients, except for pasta, and refrigerate for 30-45 min., tossing gently from time to time.
Mix refrigerated preparation and pasta together.
Serve with a baguette and pieces of Mamirolle cheese.
