Recipe ingredients

  • 4 veal chops, 2 1/2 cm (1 in.) thick
  • 125 mL (1/2 cup) olive oilIrresistible*
  • 45 mL (3 Tbsp.) balsamic vinegarIrresistible*
  • 2 garlic cloves, chopped
  • 15 mL (1 Tbsp.) chopped fresh thyme
  • 30 mL (2 Tbsp.) chopped flat leaf parsley
  • 120 g (4 oz.) blue cheese
  • Three-Pepper Salad
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 yellow pepper, diced
  • 2 stalks celery, diced
  • 1 red onion, diced
  • Juice of 1 lemon
  • 30 mL (2 Tbsp.) chopped flat-leaf parsley
  • Salt and pepper to taste

Preparation

Put chops in a dish. Add remaining ingredients, except cheese and refrigerate for 2 hours.
Meanwhile, mix three-pepper salad ingredients together and let stand.
Drain chops and cook about 3-4 minutes per side or on the BBQ
(medium heat) cook about 5-8 minutes per side
Top each chop with a slice of blue cheese before serving.
