Recipe ingredients

  • 3 Tbsp. (45 mL) butter*
  • 2 shallots, finely chopped
  • 5 sprigs of watercress
  • 2 Tbsp. (30 mL) flour*
  • 1 1/2 cup (375 mL) 15% cream*
  • 3/4 lb. (350 g) cooked lobster meat, chopped
  • 1 tsp (5 mL) paprika
  • Salt and pepper to taste
  • Oven grilled slices or french stick adequate amount

Preparation

Melt the butter in a saucepan on medium heat. Add the shallots and the watercress, and cook for 2 minutes.
Incorporate the flour and continue cooking for 30 seconds.
Incorporate the cream with a whisk and cook for approximately 6 minutes or until the mixture is thickened.
Add the lobster meat and continue cooking for 30 seconds.
Season with paprika, salt and pepper. Mix well and remove from heat.
Spread the mixture on grilled slices of French stick, place on a cookie sheet and broil for 2 minutes.
Serve hot.

Suggestion

Sprinkle a small amount of breadcrumbs or Parmesan cheese on the canapés before broiling.
