Recipe ingredients
- Spring mix type greens sufficient qty.
- 1 endive, separated into leaves
- 12 tinned smoked oysters, drained
- 2 fresh tomatoes
- 1 clove garlic
- 1/4 cup (60 mL) olive oil*
- 1 Tbsp. (15 mL) mayonnaise*
- 1 Tbsp. (15 mL) red wine vinegar
- Salt and pepper to taste
Preparation
In each plate, arrange 3 endive leaves in a fan.
Place a smoked oyster on each leaf.
Garnish with a little spring mix.
PurŽe coulis ingredients together in a blender.
Pour coulis over salad and serve.
Suggestion
