Recipe ingredients
- 2 large lemons, thinly sliced
- 3 garlic cloves, thinly sliced
- 4 fillets 1.5 lb approx. (700 to 800 g)
- To taste pepper
- 1/4 cup (60 mL) water
- 4 tsp. (20 mL) olive oil
- 2 Tbsp. (30 mL) lemon juice
- 1/4 tsp. (1 mL) ground coriander
- 3 Tbsp. (45 mL) blanched almonds, sliced
- Fresh parsley, to garnish
Preparation
Pre-heat the oven at 230ºC (450ºF).
Cover the bottom of a baking pan with lemon slices and garlic.
Place 2 fish fillets; cover with lemon slices and garlic.
Place 2 fish fillets on top; sprinkle with pepper.
Mix the water, olive oil, lemon juice and coriander; pour over the fillets.
Cover with foil.
Bake 10 minutes per 2.5 cm ( 1 in.) of thickness, 20 to 25 minutes or until the fish is opaque.
Grill the almonds.
