Recipe ingredients
- 1 Tbsp. (15 mL) oil
- 1 Tbsp. (15 mL) butter
- 4 veal paupiettes
- 2 Tbsp. (30 mL) butter
- 2 Tbsp. (30 mL) flour
- 2 cups (500 mL) milk
- 1/3 cup (75 mL) grated parmesan
Preparation
Preheat the oven to 350ºF (180ºC).
In a frying pan, heat oil and butter; sear paupiettes on all sides.
Put on an oven sheet.
Cook uncovered 30 minutes.
In a pot, melt butter until nut-brown.
Remove from heat and stir in flour; mix well.
Return to lowest heat and gradually add hot milk.
Cook over low heat until mixture thickens, about 10 minutes.
Stir in the parmesan.
Suggestion
Marinated vegetables: slice tomatoes and cucumber, add your favourite Italian-style dressing and a little wine vinegar. Marinate in the refrigerator at least 2 hours.* We recommend Selection and Irresistibles products.
