Recipe ingredients
- 1/2 lb. (225 g) salmon fillet, cut into 1-in. (2.5-cm) cubes
- 1/2 lb. (225 g) sea scallops
- 1/2 lb. (225 g) jumbo shrimp, shelled
- Marinade
- 1 lemon, juice and chopped zest
- 1/2 cup (125 mL) orange juice
- 1/4 cup (60 mL) olive oil*
- 1 garlic clove, minced
- 2 Tbsp. (30 mL) chopped fresh coriander
- 1/4 cup (60 mL) butter*, melted
- Salt and freshly ground pepper to taste
Preparation
In a bowl, combine all marinade ingredients except melted butter, salt and pepper. Add salmon, scallops and shrimp, stirring to coat all pieces with marinade. Refrigerate 30 minutes.
Set barbecue to medium and oil the grill. Thread pieces of seafood onto skewers. Lay brochettes on the grill and cook 5-7 minutes, turning and basting them a few times with melted butter. The brochettes are ready when scallops are opaque, shrimp pink and salmon is easily flaked. Season with salt and pepper and serve immediately.
