Recipe ingredients

  • 2 lb. (1 kg) white fish
  • 6 cups (1.5 l) cold water
  • 1 onion, minced
  • 2 ribs celery, minced
  • 2 shallots, shredded (finely chopped)
  • 8 mushrooms, sliced
  • 1 bouquet garni (celery, thyme, bay leaf)
  • 1 lemon quarter

Preparation

Rinse fish under cold water, put in a pan.
Add water, bring almost to the boiling point; skim.
Add vegetables, bouquet garni and lemon. Simmer gently
20 minutes.
Line a strainer with cheesecloth and strain stock.
