Recipe ingredients
- 4 Olymel regular smoked sausages, sliced thin
- 1 cup (250 mL) red beans, drained
- 1 12-oz. (341-mL) can of corn*, drained
- 1 red pepper, chopped
- 1 green pepper, chopped
- 1/4 red onion, chopped
- 1 green onion, sliced thin
- 1/2 lime, juice only
- 1 1/2 cups (375 mL) mild salsa*
- 1 Tbsp. (15 mL) chopped fresh coriander
- Olive oil*
- Nachos to taste*
Preparation
Preheat barbecue to medium.
In a bowl, mix together all ingredients except olive oil and nachos.
Make 4 double-layered foil squares at least 12 in. by 12 in. (30 cm by 30 cm). Mound some mixture in the middle of each square, drizzle with a few drops of olive oil and fold edges up to make an airtight bundle.
Cook bundles on the barbecue for 10 min. or until piping hot.
