Recipe ingredients
- 6 eggs
- 1/4 cup (60 mL) milk
- 1 Tbsp. (15 mL) chopped fresh parsley
- Salt and pepper to taste
- 1 Tbsp. (15 mL) vegetable oil*
- 1 garlic clove, chopped
- 2 leeks, white part only, sliced
- 1/2 green pepper, cut into strips
- 1/2 red pepper, cut into strips
- 6 oz. (180 g) smoked salmon *, cut into strips
- 4 tsp. (20 mL) sliced pitted black olives
- 1/2 cup (125 mL) grated Emmenthal cheese
Preparation
Preheat oven to broil.
In a bowl, beat eggs, milk, parsley, salt and pepper together.
In a 10-in. (25-cm) ovenproof skillet, cook garlic, leeks and peppers 2 min. in hot oil.
Add egg mixture and smoked salmon. Sprinkle olives in. Cook on medium-low heat about 8 min. or until edges are cooked but the centre is still runny.
Sprinkle with cheese and broil 4 min. or until cheese is browned.
