Recipe ingredients

  • 1 lb. (450 g) rotini
  • 1/2 lb. (225 g) feta cheese, cubed
  • 1/2 cup (125 mL) cherry tomatoes, halved
  • 1/2 cup (125 mL) snow peas, cut diagonally
  • 1/2 red onion, cut into strips
  • Dressing:
  • 2/3 cup (160 mL) olive oil*
  • Juice of 1 lemon
  • 2 Tbsp. (30 mL) Dijon mustard*
  • 2 Tbsp. (30 mL) honey*
  • 2 garlic cloves, chopped
  • 3 Tbsp. (45 mL) fresh mint, chopped
  • Salt and pepper to taste

Preparation

Cook rotini according to package instructions.
Set aside.
Meanwhile, in a big bowl, mix dressing ingredients together.
Add cooled cooked rotini and vegetables.
Mix thoroughly.
Chill 1 hr. to blend flavours.

Suggestion

This is a great lunch box recipe as it keeps 3-4 days in the refrigerator and can therefore be made ahead of time.
