Recipe ingredients
- 8 fresh pickerel fillets
- 1 cup (250 mL) tomato juice*
- 1/4 cup (60 mL) white wine or apple juice* or chicken broth*
- Juice of 1 lemon
- 1 leek, thinly sliced
- 2 garlic cloves, chopped
- 3 Tbsp. (45 mL) chopped fresh parsley
- 1 tsp. (5 mL) herbes de Provence
- 1 Irresistibles bay leaf*
- Salt and pepper to taste
Preparation
Preheat oven to 450°F (230°C).
Place fillets in a lightly greased 12x9-in. (30x23-cm) baking dish. Set aside.
In a bowl, mix remaining ingredients. Pour over fish.
Cover with foil and bake 6-8 minutes. or until fish is easily flaked with a fork.
