Recipe ingredients
- 2/3 cup (160 mL) mayonnaise*
- 1/3 cup (80 mL) sour cream
- 1/4 cup (60 mL) chopped fresh coriander or parsley
- 2 Tbsp. (30 mL) each: milk and lime juice
- 1 fresh jalapeño, seeded and minced
- Salt and freshly ground pepper to taste
- 2 1/2 cups (625 mL) fusili pasta, cooked, rinsed under cold water and drained
- 2 big tomatoes, seeded and chopped
- 1 yellow pepper, cut into thin strips
- 1 zucchini, sliced thin
- 3 green onions, sliced thin
Preparation
In a large bowl, mix first 6 ingredients together and season to taste.
Gently stir in remaining ingredients to coat evenly.
Cover and chill 1 hr. in the fridge so that flavours blend.
