Recipe ingredients
- Dressing:
- 1/3 cup (80 mL) olive oil*
- 2 Tbsp. (30 mL) balsamic vinegar*
- 2 tsp. (10 mL) each: Dijon mustard* and maple syrup*
- Salt and pepper to taste
- 4 cups (1 L) fresh spinach, chopped
- 2 mandarins, peeled, divided into segments
- 1/2 cup (125 mL) pineapple chunks
- 2 Rocha pears, sliced
- 1 Tbsp. (15 mL) vegetable oil*
- 1 lb. (450 g) cooked shrimp, size 61-70
Preparation
In a bowl, mix dressing ingredients together. Set aside.
Divide spinach among 4 plates and arrange fruit over it.
In a skillet, heat oil and warm shrimp 1-2 min.
Top salads with hot shrimp and drizzle with dressing.
