Recipe ingredients
- 4 chicken legs, cut in two at the joint
- 1 Tbsp. (15 mL) each: butter*, melted, Dijon mustard* and honey*
- 1/2 cup (125 mL) breadcrumbs
- 1/4 cup (60 mL) finely grated cheddar
- 1 tsp. (5 mL) each: paprika, thyme and basil
Preparation
Brush pieces of chicken with butter, mustard, honey mixture. Set aside.
In a bowl, mix breadcrumbs, cheddar and spices together.
Roll chicken in breadcrumbs to coat and put on lightly oiled baking sheet.
Bake at 400ºF/200ºC for about 35-40 min. or until chicken is cooked through. Finish with a few minutes under the broiler for a crispy crust.
5. Serve with honey or barbecue sauce, home fries and steamed vegetables.
