Recipe ingredients
- 1 English cucumber, peeled, seeded and coarsely chopped
- 1 each: red and green peppers, coarsely chopped
- 1/2 white onion, coarsely chopped
- 8 vine tomatoes, peeled, seeded and coarsely chopped
- 1/4 cup (60 mL) Irresistible Mezzo olive oil
- 2 Tbsp. (30 mL) chopped fresh coriander
- 1 Tbsp. (15 mL) white wine vinegar*
- 2 garlic cloves
- Juice of 1 lime
- Salt, pepper and Tabasco sauce to taste
Preparation
In the food processor or blender, purée cucumber, peppers, onion and half the tomatoes. Set aside in a large bowl.
Purée remaining ingredients and add to the bowl. Season to taste and refrigerate for 2 hours.
Suggestion
Serve cold and garnish with a brunoise of finely diced vegetables.* We recommend Selection and Irresistibles products.
