Recipe ingredients
- 3 of each: yellow and red hot peppers
- 1 Tbsp. (15 mL) vegetable oil*
- 1/2 white onion, chopped
- 1 lb. (450 g) lean ground beef
- 1 cup (250 mL) white rice, cooked*
- 1 tomato, seeds removed and finely diced
- 1/2 cup (125 mL) vegetable juice
- 3 Tbsp. (45 mL) fresh basil, chopped
- Salt and pepper to taste
- 1 cup (250 mL) mozzarella cheese, grated*
Preparation
Preheat oven to 350 F (175 C).
Remove the top, seeds and inner membranes of the hot peppers; set aside.
In a frying pan, heat oil and brown onion. Add ground beef and cook 8 minutes, or until well-done.
Add rice, tomato, vegetable juice, basil, salt and pepper; cook 1 more minute. Add cheese and mix well.
Distribute stuffing among the 6 hot peppers and place these in a shallow baking dish. Cover with aluminium foil and cook 30 minutes.
