Recipe ingredients
- Dressing
- 1 Tbsp. (15 mL) frozen orange juice concentrate, thawed*
- 1 tsp. (5 mL) Irresistibles white wine vinegar*
- 1/4 cup (60 mL) Irresistibles walnut oil*
- 1/2 garlic clove, minced
- 1/2 tsp. (2 mL) poppy seeds
- White pepper to taste
- Salad
- 3 Tbsp. (45 mL) brown sugar*
- 1/2 cup (125 mL) cashews*
- 4 cups (1 L) baby spinach
- 2 nectarines, pitted and diced
- 2 cups (500 mL) strawberries
Preparation
In a small bowl, mix dressing ingredients together. Set aside.
In a small skillet over medium heat, heat brown sugar with about 1 Tbsp. (15 mL) water until melted.
Add cashews and cook stirring for 2 minutes or until sugar syrup starts to cling to nuts.
Remove immediately from heat and transfer nuts to a sheet of foil. When nuts are completely cooled break apart any that stick together.
In a salad bowl, combine spinach, nectarines and strawberries.
Add dressing and toss.
Sprinkle with candied nuts and serve immediately.
Suggestion
Mandarins and raspberries can be substituted for nectarines and strawberries.* We recommend Selection and Irresistibles products.
