Recipe ingredients
- 4 La Fourchette chicken souvlakis, thawed
- Olive oil as needed*
- 1 each: small yellow and green zucchini, sliced thin lengthways
- 2 60-g square thin pizza crusts
- 1/3 cup (80 mL) pesto
- 1 fresh tomato, sliced thin
- 3/4 cup (180 mL) grated Emmenthal
- Freshly ground pepper
- 12 leaves fresh basil
Preparation
Preheat barbecue to medium.
Cook souvlakis on oiled grill for 6-8 minutes or until cooked through. Remove chicken from skewers and dice finely. Set aside.
Meanwhile, brush sliced zucchini with oil. Cook on the grill for 2 minutes per side.
Cook pizza crusts on barbecue for 2 minutes. Turn and brush with pesto. Cover with sliced tomato and zucchini. Top with diced chicken and cheese. Close cover and cook another 4 minutes or until cheese is melted.
Season with pepper and garnish with fresh basil leaves.
Serve hot or cold.
