Recipe ingredients
- Dressing:
- 3 Tbsp. (45 mL) lime juice
- 2 Tbsp. (30 mL) sugar*
- 1 Tbsp. (15 mL) soya sauce*
- 1 tsp. (5 mL) chopped fresh ginger
- 2 cups (500 mL) cooked white rice*
- 1/2 cup (125 mL) each: julienned carrots and cucumber (seeded)
- 3 Tbsp. (45 mL) shredded fresh basil
- 3 radishes, sliced very thin
- 1 orange, peeled and sliced thin
- 1 lb (450 g) 31/40, tail-on cooked shrimp, thawed
Preparation
In a bowl, mix dressing ingredients together. Set aside.
In another bowl, combine rice, carrots and cucumber, basil, radishes, orange and shrimp. Add dressing and toss gently.
If desired, garnish with basil leaves. Serve cold.
