Recipe ingredients
- Salsa:
- 1 large avocado, diced
- 1 mango, peeled, diced
- 1 tomato, seeded, diced
- Juice of 1 lime
- 1 Tsp. (5 mL) fresh ginger, grated
- Salt and freshly ground pepper to taste
- Croquettes:
- 1 package (400 g) Jonah crab meat, thawed
- 2 eggs, beaten
- 3 Tbsp. (45 mL) mayonnaise*
- 1/2 cup (125 mL) fine bread crumbs
- 1/4 cup (60 mL) red pepper, diced small
- 1 green onion, chopped
- 2 Tsp. (10 mL) of each : fresh coriander and chives, chopped
- 4 Tsp. (20 mL) lemon rind, chopped
- Salt and freshly ground pepper to taste
- Quantity of peanut oil necessary for frying
Preparation
In a bowl, mix all salsa ingredients and set aside in refrigerator.
In another bowl, mix the following 9 ingredients. Season. Make 16 croquettes approximately 1 in. (2.5 cm) in diameter. Refrigerate 30 minutes.
In a pot, heat oil to a light simmer. Submerge the croquettes and cook until
golden, about 1 to 2 minutes. Serve croquettes with salsa
Suggestion
Croquettes may also be cooked in the oven for approximately 20 minutes.* We recommend Selection and Irresistibles products.
