Recipe ingredients

  • Salsa:
  • 1 large avocado, diced
  • 1 mango, peeled, diced
  • 1 tomato, seeded, diced
  • Juice of 1 lime
  • 1 Tsp. (5 mL) fresh ginger, grated
  • Salt and freshly ground pepper to taste
  • Croquettes:
  • 1 package (400 g) Jonah crab meat, thawed
  • 2 eggs, beaten
  • 3 Tbsp. (45 mL) mayonnaise*
  • 1/2 cup (125 mL) fine bread crumbs
  • 1/4 cup (60 mL) red pepper, diced small
  • 1 green onion, chopped
  • 2 Tsp. (10 mL) of each : fresh coriander and chives, chopped
  • 4 Tsp. (20 mL) lemon rind, chopped
  • Salt and freshly ground pepper to taste
  • Quantity of peanut oil necessary for frying

Preparation

In a bowl, mix all salsa ingredients and set aside in refrigerator.
In another bowl, mix the following 9 ingredients. Season. Make 16 croquettes approximately 1 in. (2.5 cm) in diameter. Refrigerate 30 minutes.

In a pot, heat oil to a light simmer. Submerge the croquettes and cook until
golden, about 1 to 2 minutes. Serve croquettes with salsa

Suggestion

Croquettes may also be cooked in the oven for approximately 20 minutes.
