Recipe ingredients

  • 4 to 8 grain-fed veal shanks (depending on size)
  • 1/4 cup (60 mL) seasoned flour* (salt, pepper, herbes de Provence or Italian fines herbs, to taste)
  • 2 Tbsp. (30 mL) butter*
  • 2 Tbsp. (30 mL) canola oil*
  • 1 cup (250 mL) onion
  • 1 cup (250 mL) carrot
  • 2 tsp. (10 mL) chopped garlic
  • 1 cup (250 mL) dry white wine
  • 2 cups (500 mL) chicken broth*
  • 2 cups (500 mL) tomatoes, peeled and riped, in their juice
  • Gremolata :
  • 1/4 cup (60 mL) finely chopped fresh parsley
  • 2 Tbsp. (30 mL) grated lemon rind
  • 1 Tbsp. (15 mL) finely chopped garlic

Preparation

Wipe meat with a paper towel. Put seasoned flour in a plastic bag, add 1 or 2 shanks and shake well to coat evenly. Repeat with the rest of the meat. In a large casserole or saucepan, melt butter with oil at medium-high heat and sear meat. Add onions, carrots and garlic; mix. Add wine, broth and tomatoes. Cover and let simmer over low heat 2h15.
In the meantime, mix gremolata's ingredients. When the meat is cooked, remove from saucepan and keep it warm.
Increase heat, add half of gremolata and reduce sauce to half by cooking it for about 15 minutes.
Serve steaks covered with sauce and
sprinkle with the rest of the gremolata. Serve with pasta.
