Creamy Crab and Coconut Milk Soup

Recipe ingredients
- 2 10-oz. (284-mL) cans chicken broth*
- 1 cup (250 mL) coconut milk
- 4 oz. (113 g) canned crab*
- 2 Tbsp. (30 mL) bottled lime juice
- 1/2 red pepper, in strips
- Freshly ground pepper to taste
- 4 scallions, thinly sliced
- 1/4 cup (60 mL) chopped fresh coriander
Preparation
In a pan, bring chicken broth and coconut milk to a boil.
Add crab, lime juice and red pepper and cook another 2 minutes. Pepper to taste.
Serve in soup plates and garnish with sliced scallions and coriander.
Suggestion
Substitute shrimp or chicken for crab and garnish with rice vermicelli.* We recommend Selection and Irresistibles products.
