Recipe ingredients

  • 2 10-oz. (284-mL) cans chicken broth*
  • 1 cup (250 mL) coconut milk
  • 4 oz. (113 g) canned crab*
  • 2 Tbsp. (30 mL) bottled lime juice
  • 1/2 red pepper, in strips
  • Freshly ground pepper to taste
  • 4 scallions, thinly sliced
  • 1/4 cup (60 mL) chopped fresh coriander

Preparation

In a pan, bring chicken broth and coconut milk to a boil.

Add crab, lime juice and red pepper and cook another 2 minutes. Pepper to taste.

Serve in soup plates and garnish with sliced scallions and coriander.

Suggestion

Substitute shrimp or chicken for crab and garnish with rice vermicelli.
