Recipe ingredients

  • 4 cups (1 litre) vegetable cocktail*
  • 1 cup (250 mL) cocktail sauce*
  • 1/2 cup (125 mL) finely shredded red pepper
  • 1/4 cup (60 mL) finely shredded green pepper
  • 1/2 cup (125 mL) finely shredded seeded cucumber
  • 1 stalk celery, chopped
  • 2 green onions, chopped
  • 1/4 cup (60 mL) chopped fresh coriander
  • Salt and pepper to taste
  • 24 frozen cooked shrimp*
  • 4 slices of lime
  • 8 Sea Salt and Black Pepper Puff Pastry Swiss Twists*

Preparation

In a bowl, mix vegetable cocktail, cocktail sauce, vegetables and coriander together. Season to taste. Cover and refrigerate for 4 hours.

Meanwhile, defrost the shrimp in the refrigerator.

Before serving, spoon cocktail into champagne glasses, add shrimp and garnish with a slice of lime.

Suggestion

Replace coriander with fresh oregano or another fresh herb.
