Recipe ingredients
- 1/4 cup (60 mL) plain breadcrumbs
- 1/4 cup (60 mL) chopped fresh parsley
- 3/4 cup (180 mL) grated parmesan
- 1/4 cup (60 mL) olive oil*
- 4 5-oz. (150-g) fresh salmon fillets
- 2 Tbsp. (30 mL) Dijon mustard*
- Salt and freshly ground pepper to taste
- 2/3 cup (160 mL) olive oil-balsamic vinegar dressing*
- 6 cups (1.5 litres) mesclun
- 16 cherry tomatoes, halved
Preparation
In a bowl, mix breadcrumbs with parsley, parmesan and olive oil. Set aside.
In a non-stick skillet, sear salmon 1 minute per side. Set aside.
Preheat oven to 400ºF/200ºC.
Coat fillets with mustard, salt and pepper, then divide the breadcrumb mixture among the 4 fillets. Place on a baking sheet and bake 8 minutes or until crust is browned.
Meanwhile, toss mesclun and vinaigrette, divide among four plates and top with salmon. Garnish with cherry tomatoes and serve immediately.
