Breaded Veal Cutlets with Brie

Recipe ingredients
- 3 eggs
- Sufficient quantity oil
- Salt and pepper to taste
- 6 Tbsp. (90 mL) flour
- 6 Tbsp. (90 mL) breadcrumbs
- 4 veal cutlets
- 2 oz (60 g) Canadian Brie
- 4 oz (115 g) butter
- 3 Tbsp.(45 mL) olive oil
- l lb (450 g) fresh pasta
- Slice of lemon to taste
- Grated Canadian Parmesan OR shredded Aged Cheddar to taste
Preparation
Break eggs into a shallow bowl and beat with a little oil, salt and pepper.
Place flour in a second bowl and breadcrumbs in a third.
If necessary, pound cutlets thin between two sheets of plastic wrap. Place slices of Canadian Brie in centre of each cutlet and fold in sides.
Dredge folded cutlet in flour, dip in eggs and then in breadcrumbs.
Cook in butter and oil for 5 minutes on each side.
Meanwhile cook pasta according to package directions.
Serve cutlets over fresh pasta with a slice of lemon and grated Parmesan or shredded Cheddar.
