Recipe ingredients
- Ginger mayonnaise
- 1 cup (250 mL) mayonnaise*
- 1/4 cup (60 mL) plain yoghurt*
- 1 tsp. (5 mL) fresh ginger, grated
- 1 tsp. (5 mL) lime zest, finely grated
- 2 tsp. (10 mL) lime juice
- Salt and pepper to taste
- 4 fresh salmon brochettes
- Sufficient quantity of olive oil*
Preparation
Preheat the oven to400ºF/205ºC.
In a bowl, mix all ingredients for the mayonnaise until the mixture is smooth. Place in the refrigerator for at least 1 hour before serving.
Put a little olive oil on an ovenware tray and place the skewers on it. Brush the salmon and vegetables with olive oil.
Broil carefully about 3 to 4 minutes. Place on a serving dish decorated with slices of lime and serve with the mayonnaise.
