Recipe ingredients
- 5 cups (1.25 L) parsnips, peeled and cut into medium-sized pieces
- 2 onions, coarsely chopped
- 2 garlic cloves, minced
- 1 large potato*, peeled and cubed
- 2 Tbsp. (30 mL) butter*
- 1/4 cup (60 mL) milk
- 3 Tbsp. (45 mL) chopped chives
- Salt and pepper
Preparation
In a large pot of boiling water, cook parsnips, onion, garlic and potato until tender.
Drain vegetables and mash or purée in a food processor, adding butter and milk.
Stir in chives, salt and pepper. Serve.
