Recipe ingredients
- Stuffing
- 4 oiled dried tomatoes, minced
- 3/4 cup (180 mL) marinated mushrooms, thinly sliced
- 1 small eggplant, cut in julienne
- 2 tsp. (10 mL) fresh basil, chopped
- 1 Tbsp. (15 mL) liquid honey
- 1/2 cup (125 mL) Provolone cheese, grated
- Salt and pepper to taste
- 2 Tbsp. (30 mL) canola oil *
- 4 fresh boneless chicken breasts 4 to 5 oz (115 g to 150 g)
Preparation
Preheat barbecue to medium.
In a glass bowl, mix all the stuffing ingredients. Set aside.
Slice chicken breasts open butterfly style, place between two layers of plastic wrap, and flatten with a meat tenderizer or heavy pan.
Spread stuffing in the centre of each breast. Fold and close with toothpicks.
Oil and place stuffed chicken breasts on very hot barbecue grill.
Cook 6 to 8 minutes each side. Serve.
