Recipe ingredients
- 2 cups (500 mL) shelled fresh fava beans
- 1 large onion, diced fine
- 2 carrots, peeled and diced fine
- 2 stalks celery, diced fine
- 2 parsnips, peeled and diced fine
- 1 medium white turnip, peeled and diced fine
- 1 garlic clove, minced
- ½ cup (125 mL) diced bacon*
- 4 cups (1 L) chicken broth*
- 1 Irresistibles bay leaf*
- 1 Tbsp. (15 mL) Irresistibles extra virgin olive oil*
- Salt and pepper to taste
Preparation
In a pot, heat olive oil on medium and add bacon, garlic, onion, carrots, celery, parsnips and turnip. Cook 3 minutes, stirring occasionally.
Add beans, bay leaf and chicken broth.
Cover and simmer 40 minutes on medium-low.
Remove bay leaf and season to taste with salt and pepper.
