Recipe ingredients
- 1/3 cup (80 mL) onions, thinly sliced
- 2 garlic cloves, thinly sliced
- 2 Tbsp. (30 mL) olive oil*
- 1/4 cup (60 mL) tomato paste
- 1 cup (250 mL) dry white wine
- 1 Tbsp. (30 mL) herbs of Provence
- 1 Tbsp. (15 mL) paprika
- 1 tsp. (5 mL) Cayenne pepper
- Salt and pepper to taste
- 6 lb. (3 kg) mussels
Preparation
In a large pot, sauté the onion and garlic in oil for 1 minute Incorporate the tomato paste and continue cooking approximately 2 minutes Add the white wine, herbs of Provence and season. Once the liquid is simmering gently, add the museels, cover and raise the heat. Cook from 5 to 7 minutes. Stir frequently during cooking.
