Recipe ingredients
- 36 ripe medium size tomatoes
- 10 peaches
- 12 red apples (Empire, Spartan, Cortland), peeled and diced to 1/2 in. (1 cm)
- 10 pears (Bartlett, Bosc), peeled and diced to 1/2 in. (1 cm)
- 4 large onions, minced
- 1 stalk of celery, minced
- 2 Tbsp. (30 mL) coarse salt
- 1/2 cup (125 mL) pickling spice
- 2 cups (500 mL) white vinegar*
- 3 cups (750 mL) sugar
Preparation
Blanch tomatoes and peaches in a pot filled with boiling water. Rinse them under cold running water and peel. Dice to ½ in. (1 cm).
In a thick bottom pot, place tomatoes, peaches, apples, pears, onions and celery. Wrap spices in cheese cloth and add to tomatoes along with vinegar and salt. Bring to a boil and simmer 1 hour.
Add sugar and continue cooking 15 to 20 minutes, stirring often with a wooden spoon.
Remove spices and pour into sterilized preserve jars.
