Recipe ingredients

  • 4 endives, leaves separated
  • 12 slices of Genoa salami*, cut in halves
  • A few slices of Provolone cheese
  • 12 dried tomatoes in oil, chopped
  • 12 black olives*, cut in halves
  • 1/4 cup (60 mL) Delicato olive oil*

Preparation

Place a slice of salami in each endive leaf. Cover with one strip of Provolone cheese approximately 1/2 inch (1 cm) wide. Add a small tsp. of dried tomatoes and top with half a black olive. Add a few drops of Delicato olive oil and pepper to taste.
