Recipe ingredients
- 2 cups (500 mL) milk
- 1/4 tsp. (1 mL) saffron threads
- 1/4 tsp. (1 mL) ground cardamom
- 3 egg yolks*
- 1/2 cup (125 mL) sugar
- 2 Tbsp. (30 mL) flour*
- 3 Tbsp. (45 mL) unsalted pistachios, shelled and crushed
Preparation
Preheat oven to 350ºF (175ºC).
Put milk, spices and half of the sugar in a saucepan over low heat. Scald and set aside.
Meanwhile, in a bowl, beat egg yolks and remaining sugar with a hand mixer until thick and pale.
Sift flour over egg yolk mixture and gently fold it in.
Stir two ladlefuls of hot milk into egg mixture to warm it gently.
Suggestion
Stir while adding milk or egg mixture will clot.Pour egg mixture into remaining milk and cook on medium-high until custard thickens, stirring constantly with a wooden spoon.
Pour custard into four medium custard cups. Set cups in a baking dish. Pour hot water into the pan to come halfway up the sides of the cups.
Bake 25 min.
Remove custards from the water bath and cool at room temperature. Serve warm or cold, sprinkled with pistachios.
For a fruity flourish, decorate with sliced fresh figs before serving.
