Recipe ingredients

  • 2 Tbsp. (30 mL) olive oil*
  • 10 1/2 oz. (300 g) ground ostrich
  • 10 1/2 oz. (300 g) ground bison
  • 7 oz. (210 g) ground horsemeat
  • 1 egg*
  • 1/2 cup (125 mL) red wine
  • 2 Tbsp. (30 mL) paprika
  • 1 tsp. (5 mL) chilli powder
  • 1 tsp. (5 mL) ground coriander
  • 1 tsp. (5 mL) ground cumin
  • 2 tsp. (10 mL) salt
  • 1/2 tsp. (2.5 mL) ground pepper
  • Sauce
  • 2 Tbsp. (30 mL) minced shallot
  • 1 Tbsp. (15 mL) olive oil*
  • 1/2 cup (125 mL) red wine
  • 2 Tbsp. (30 mL) grainy mustard*
  • 1/2 cup (125 mL) instant demy-glace sauce
  • 2 Tbsp. (30 mL) cream
  • 1 Tbsp. (15 mL) chopped fresh basil

Preparation

Preheat oven to 350°F (175°C).
Oil a 12-cup muffin pan.
Mix game cake ingredients together.
Fill muffin cups 3/4 full.
Bake for 30 minutes.
Cook shallots in oil over high heat.
Add wine and reduce by half.
Stir in mustard and demy-glace and cook 2 minutes.
Stir in cream and basil.
Serve cakes with sauce.

Suggestion

Wrap cakes in caul fat, then place in muffin cups.
