Recipe ingredients
- 7 oz. (227 g) mesclun
- 2 ripe tomatoes, cut into wedges
- 2 ripe peaches, peeled, pitted and cubed
- 1 medium white onion, sliced fine and separated into rings
- ½ cup (125 ml) cubed semi-soft raw or pasteurized milk cheese like Gouda, Oka, etc.
- ½ cup (125 mL) minced fresh basil
- Dressing
- ½ cup (125 mL) Irresistibles Mezzo olive oil*
- 6 Tbsp. (90 mL) Irresistibles white wine vinegar*
- 1 Tbsp. (15 mL) Irresistibles Dijon mustard*
- 1 Tbsp. (15 mL) orange marmalade*
- 1 shallot, minced
- ½ red sweet pepper, chopped
Preparation
In a salad bowl, toss mesclun with tomatoes, peaches, onion rings and cheese.
Sprinkle with chopped basil.
Mix dressing ingredients together and pour over salad.
