Recipe ingredients
- 4 duck breasts
- As neede Irresistibles extra virgin olive oil*
- 1 small Chilli pepper, thinly sliced
- 2 Tbsp. (30 mL) sugar*
- 2 Tbsp. (30 mL) orange juice*
- Supremes of 2 oranges
- Zest of blanched oranges to taste
- Marinade
- 3 Tbsp. (45 mL) ginger, grated
- 2 Tbsp. (30 mL) chilli, thinly sliced
- 11/4 cup (310 mL) apple juice no sugar added
- Salt and pepper to taste
Preparation
Score the fat side of the duck breast without cutting the meat. Mix marinade ingredients and let the duck marinate 1 hour.
Brown the fat side of the duck on medium-high heat. Remove the rendered fat regularly and save.
Reduce heat to low, add sugar and let caramelize. Add orange juice, zest and braise a few minutes. Remove the duck and keep it hot.
Reduce the sauce over high heat. Adjust seasoning. Pour on breasts and garnish with orange supremes
