Recipe ingredients
- 1 pkt x 350 g of Olivieri's Fresh Three Cheese Tortellini
- 1 pkt of 170 mL Olivieri's Olive Oil & Garlic Pesto
- 1/4 – 1/2 cups (60 mL to 125 mL) salad dressing
- 2 Tins oil-packed Tuna, drained and flaked
- 1 can 19 oz (540 mL) diced tomatoes
- 1/2 tsp. (3 mL) salt
- 1/4 tsp. (1 mL) black pepper
- 1 cup(250 mL) loosely packed of fresh basil
- 2 large eggplants, diced, grilled or sautéed, and chilled
- 2 cups (500 mL) cherry tomatoes, halved in two (optional)
- Walnut pieces for garnish (optional)
- Shredded Parmesan cheese for garnish (optional)
Preparation
Cook the Olivieri‘s tortellini according to package instructions, drain and rinse under cold water. Place in large bowl.
In separate bowl, mix Olivieri's Olive Oil & Garlic Pesto, spices and salad dressing.
Pour sauce mixture onto pasta and toss to mix well. * Add all vegetables and tuna. Toss to mix well. Best served chilled.
Garnish with Parmesan cheese or cherry tomatoes and/or walnut pieces.
Chill and serve.
