Recipe ingredients
- 1 pkt/350 g Olivieri's Fresh Three Cheese Tortellini
- 2 pkts/340 g Bruschetta Pesto Sauce
- 1/4 cup (60 mL) Irresistibles red wine vinegar*
- 1/4 cup (60 mL) Irresistibles extra virgin olive oil*
- 1/4 tsp.(1 mL) thyme, rubbed
- Sufficient quantity Feta cheese, crumbled
- 1 red pepper, coarsely chopped
- 1 green pepper, coarsely chopped
- 1 English cucumber, diced
- 1/2 red onion, sliced rings
- 1/2 cup (125 mL)olives sliced
- Salt, pepper to taste
Preparation
Cook Olivieri's Three Cheese Tortellini according to package instructions; drain and rinse under cold water.
Place in large bowl; drizzle with a little olive oil.
Meanwhile, in a separate container, premix the Olivieri bruschetta sauce, red wine vinegar, olive oil and thyme.
Add to pasta the premixed bruschetta sauce, Feta and all vegetables.
Toss to mix well.
Reserve some Feta as top garnish.
Chill and serve.
