Recipe ingredients
- 1 pkt of Olivieri's Fresh Cheese Tortellini
- 1 red pepper, coarsely chopped
- 1 orange pepper, coarsely chopped
- 1 yellow pepper, coarsely chopped
- 1 green pepper, coarsely chopped
- 8 cups (2 L) red raspberries
- 8 cups (2 L) strawberries, halved
- ½ cup (250 mL) cranberries
- ½ cup (250 mL) raisins*
- 1/2 cantaloupe, largely diced
- 1/2 honeydew melon, largely diced
- 1 cup (250 mL) grapes, halved
- 1/4 cup (60 mL) Irresistibles red wine vinegar*
- 2 Tbsp. (30 mL) Irresistibles raspberry vinegar*
- 1/2 cup (250 mL) raspberry juice or raspberry cranberry juice
- 1/2 tsp. (3 mL) lemon juice
- 1 Tbsp. (15 mL) sugar*
- 1/4 tsp. (60 mL) Irresistibles Dijon mustard*
- 1/4 cup (60 mL) Irresistibles olive oil*
- 1/4 cup (60 mL) almond slivers
- 1/4 cup (60 mL), pine nuts
- 1/4 cup (60 mL) walnut meal
- 1/4 tsp. (60 mL) fresh dill, finely chopped
Preparation
Cook Olivieri's Cheese Tortellini according to package instructions, drain and rinse under cold water. Place in large bowl; drizzle with a little olive oil.
Meanwhile, in a separate container, premix oil, vinegars, juices, sugar, mustard, and spices. Shake well to disperse. (can be mixed in a blender).
Add to pasta the premixed sauce, some almond slivers, walnut meal, pine nuts
and all fruits. Toss to mix well.
Reserve some sliced strawberries, raspberries and nuts for garnishing the top of salad.
Chill and serve.
Suggestion
This pasta salad works well with plain or vanilla yogurt for a refreshing meal.
