  • 1 21.2-oz. (600-g) pkg. Olivieri Chicken, Bacon & Cheese Sacchettini
  • Olive oil as needed
  • 2 6-oz. (170-g) tubs Olivieri Roasted Red Pepper Pesto
  • ¼ cup (60 ml) Irresistibles red wine vinegar or rice vinegar*
  • ¼ cup (60 ml) Irresistibles olive oil*
  • ¼ cup (60 ml) chopped fresh oregano
  • ¼ cup (60 ml) chopped fresh thyme
  • 1 red pepper, coarsely chopped
  • 1 orange pepper, coarsely chopped
  • 1 yellow pepper, coarsely chopped
  • 1 green pepper, coarsely chopped
  • 1 cup (250 mL) baby carrots, julienned
  • 1 cup (250 mL) grape tomatoes, halved
  • ¼ cup (60 ml) pine nuts
  • Salt and pepper to taste
  • 1 – 2 cups (250 – 500 mL) diced Italian pepperoni or salami

Preparation

Cook Olivieri Sacchettini according to package instructions, drain and rinse under cold water. Transfer to a large bowl and drizzle with a little olive oil.
Meanwhile, in another bowl, combine Olivieri Roasted Red Pepper Pesto with vinegar, olive oil and herbs. Whisk to blend thoroughly or use a blender.
Add pasta to sauce mixture, along with the vegetables and some pine nuts, reserving some of the tomatoes and pine nuts, and toss until thoroughly mixed.
Sprinkle reserved tomatoes and pine nuts over the salad.
Garnish to taste with minced fresh herbs.
Chill and serve.
