Spinach and Goat Brie Pasta Sauce

Recipe ingredients
- 2 cups (500 mL) milk
- 1 oz. (30 g) butter*
- 1 green onion, minced
- 1 bag (300 g) fresh spinach, finely shredded
- 2 Tbsp. (30 mL) flour*
- 31/2 oz. (100 g) goat cheese, Bûchette,
- 2/5 cup (100 mL) white wine
- Pinch of Irresistibles ground nutmeg*
- Salt and pepper to taste
Preparation
In a saucepan, heat milk.
In another pan, melt butter and sweat green onion and spinach, covered.
When spinach wilts, sprinkle with flour, and stir in cheese until it melts.
Deglaze with white wine.
Gradually stir in milk.
Season.
Simmer 15 to 20 minutes.
Serve on spinach pasta.
