Recipe ingredients
- 3 Tbsp. (45 mL) extra-virgin olive oil
- 1 medium onion, minced
- 1 clove garlic, chopped
- 1/2 cup (125 mL) chopped dried tomato
- 1 zucchini, cubed
- 1 red pepper, cubed
- 1/2 cup (125 mL) whole pitted black olives
- 3/4 cup (180 mL) prepared garlic chive dressing
- Salt and pepper to taste
- 1 lb. (450 g) monkyfish fillets
- Juice of 1/2 lemon
Preparation
In a pan, brown vegetables in oil, add dressing and season. Cook 2 minutes.
Sprinkle fillets with lemon juice.
Place the filets on the vegetables. Cover and cook 2 to 3 minutes over medium heat.
