Recipe ingredients

  • 2/3 cup (160 mL) vegetable or olive oil*
  • 1 lemon, juiced
  • 1/3 – ½ cup (80-125 mL) lightly toasted pine nuts
  • 3 garlic cloves
  • ½ cup (125 mL) fresh basil leaves
  • 1 tsp. (5 mL) freshly ground black pepper

Preparation

Put all the ingredients in a food processor and reduce to a purée.

Add a little more olive oil or lemon juice to suit your taste as the marinade must be more liquidy than a regular pesto sauce. Refrigerate.
