Recipe ingredients

  • 1 carrot
  • 1/2 celeriac
  • 1 medium sweet potato
  • 1/2 parsnip
  • 1/4 rutabaga
  • 8 broccoli flowerets
  • 1/2 sweet red pepper
  • 10 oz. (284 mL) condensed cream of mushroom soup
  • 1/2 cup (125 mL) 2% milk
  • 1/4 cup (60 mL) grated Swiss cheese

Preparation

Slice vegetables. Put all vegetables except broccoli and sweet pepper in a microwave dish.
Add 45-60 mL (3 to 4 Tbsp.) water. Cover with plastic wrap.
Microwave.
Stir during cooking. Add broccoli and sweet pepper 3 minutes before the end.
Let stand 2 minutes before serving.
Bring the cream of mushroom soup and the milk to a boil.
Pour the sauce over the vegetables and sprinkle with grated Swiss cheese.
Let stand a few minutes.

Suggestion

For uniformly cooked broccoli, cut an X in the base of each stem.
