Recipe ingredients

  • 3 x 10 oz. (3 x 284 mL) unreconstituted beef consommé*
  • 1 cup (250 mL) water
  • ½ cup (125 mL) red wine
  • 1 package of onion soup*
  • 1 carrot, grated
  • 1/2 onion, thinly sliced
  • 2 lb. (900 g) thin slices of beef, chicken, horsemeat 

Preparation

In a saucepan, place all the ingredients except the meat.
Bring to a boil and let simmer over moderate heat for 45 minutes.
Pour into a fondue pot.
Place the fondue pot on the fondue burner. Cook the sliced meat in the broth for 1 to 2 minutes.

Suggestion

To change the broth taste, use reconstituted chicken broth instead of beef consommé, and white wine instead of red.
Accompaniments:  snow peas in vinaigrette, celery-root remoulade, steamed white rice.
Light or medium-bodied red wine.
