Recipe ingredients
- Tomatoes concassé
- 4 medium tomatoes
- 1 Tbsp. (15 mL) chopped shallots
- 1 tsp. (5 mL) chopped garlic
- 2 Tbsp. (30 mL) canola oil*
- 1 green pepper, diced
- A pinch of basil
- A pinch of oregano
- Cajun spices as needed
- Salt as needed
- White pepper as needed
- 4 turkey breast fillets
Preparation
Blanch, peel and seed the tomatoes. Cut into dice.
Brown the shallots and garlic in the oil.
Add the peppers, tomatoes and herbs. Simmer for 5 minutes.
Season to taste. Set aside the tomatoes concassé (chopped tomato mixture).
In a double boiler, place the turkey fillets on a perforated rack.
Top the fillets with a little tomato mixture.
Cook for 5 to 7 minutes.
Serve the fillets, adding some of the tomato mixture.
Suggestion
To blanch a tomato, make a cross-shaped slit on top. Immerse in boiling water to scald for 1 minute, then cool under cold water. Remove the skin working from the slit.
Accompaniments: assorted colours of bell peppers, miniature corn, boiled sweet potatoes.
Full-bodied white wine, or light-bodied red wine.
