Recipe ingredients

  • 20-30 lychee nuts or 2 tins of lychee
  • Approx. 3 oz. (100 g) blue cheese, crumbled
  • Approx. 3 oz. (100 g) Philadelphia cream cheese, room temperature
  • Whipping cream 35%, as required
  • Baby spinach, as required

Preparation

Drain litchis.
In a sieve over a bowl, press crumbled blue cheese with the back of a spoon. Blend the two cheeses together until smooth, adding cream as needed.
Using a pastry bag with a small tip, pipe cheese mixture into litchis.
Place each stuffed litchi on a leaf of baby spinach and refrigerate until time to serve them.

Suggestion

Try these tasty variations.
Add a dash of port or cognac to the cheese mixture, or a few drops of mango juice, some curry powder or finely chopped parsley. For an intriguing flavour, sprinkle litchis very lightly with finely sieved cocoa powder.
