Recipe ingredients
- 500 ml (2 cups) canned chick peas*
- 45 ml (3 tbsp) whole wheat flour
- 4 garlic gloves
- 45 ml (3 tbsp) tahini (sesame butter)
- 1 dried shallot, minced
- 1 chopped onion
- 2 eggs*, beaten
- 30 ml (2 tbsp) fresh parsley, chopped
- 2 ml (1/2 tsp) Irresistibles ground coriander*
- 1 ml (1/4 tsp) Irresistibles ground cumin*
- 1 ml (1/4 tsp) Irresistibles cayenne pepper*
- 5 ml (1 tsp) tamari shoyu
- 5 ml (1 tsp) Irresistibles mint flakes*
- Frying oil as needed
- Finition
- 125 ml (1/2 cup) fresh tomatoes, cubed
- 60 ml (1/4 cup) red onions, minced
- 125 ml (1/2 cup) cucumber, cubed
- 250 ml (1 cup) plain yogurt*
- 8 whole wheat pita, heated*
Preparation
Rince and drain chick peas.
Reduce chick peas in purée.
Stir other ingredients and mix well.
Shape into 5 cm (2 inches) of diameter croquette
In a frying pan, put enough oil to fry the croquettes.
Cook the croquettes on both side to obtain a nice golden color.
In a bowl, mix the tomatoes, the onions, the cucumber and the yogurt.
Serve in a heated pita folded in half
Suggestion
For the canned chick peas, rince well to remove the gelatinous substance.* We recommend Selection and Irresistibles products.
